No Fruit Tasty Pikelets


58g steel cut oats/oats/rolled oats

2 eggs

55g chia seeds, pumpkin seeds, walnuts (or other nuts and seeds of choice)

95g finely grated carrot

75g finely grated courgette

1/2 tsp cinnamon

1/4 tsp mixed spice


Grate courgette, place on a teatowel/cheesecloth and sprinkle with a little salt. Then leave it.

Beat eggs in a medium bowl.

Mix in nuts and seeds, spices, oats and carrot.

Wrap up courgette and squeeze out all the liquid you can. Then weigh in 75g to the mixture.

Cook on a non-stick pan in large spoonfuls at a medium heat. Flip when golden on one side.

Makes about 12 pikelets. Eat half for breakfast and save the other half for the following day. Also add another 85g of vegetables of choice to your breakfast plate.
